If you root it with your internal storage encrypted, it’ll just crash shortly after accepting the password on startup, leaving a blank screen. Attempting to encrypt the storage when it’s already rooted also fails — it reboots to do the encryption, but fails and comes back into the real system with it still unencrypted.
